Remove from the oven and let cool. Once cooled, peel off the skins, remove the seeds, and slice into strips.
- Prepare the hummus: Soak the dried chickpeas in water overnight. Drain and rinse the chickpeas, then cook them in a pot of boiling water for about 1 hour or until tender. Drain and let cool.
- In a food processor, combine the cooked chickpeas, garlic cloves, olive oil, juice of one lemon, and salt to taste. Blend until smooth and creamy. If the mixture is too thick, add a little water until the desired consistency is reached.
