- Preheat your oven to 175°C (350°F).
- Peel and slice the plantains into 1 cm (0.4 inch) thick rounds.
- In a large skillet, heat the olive oil over medium heat. Add the plantains and cook until golden brown on both sides. Remove and set aside.
- In the same skillet, add the onions, garlic, and bell peppers. Sauté until the vegetables are soft and fragrant.
- Add the cumin, oregano, salt, and pepper to the skillet. Stir to combine.
- Add the cooked plantains back to the skillet and mix well with the vegetables.
- Pour in the chicken broth and let the mixture simmer for about 5 minutes, until the plantains are tender and the flavors are well combined.
- Stuff the turkey with the plantain mixture, then place the turkey in a roasting pan.
